More tender, mild, and delicate than other kales, Tuscan Kale (called cavolo nero in Italy) can be eaten raw and is thus a great addition to salads.  It is also the kale used to make ribollita, a delicious white bean soup common in the Tuscan region.  We pick ours young so that it is extra delicious.  Our favorite recipe is here.

Microgreens

Think of microgreens as living spices.  They add flavor – and color – to so many dishes, especially salads, fish, and poultry. We sell them two different ways:

  1. Harvested – This is the typical way you will see microgreens sold.  We cut them and put them in a clear plastic clam shell container.  Easy to use and will last 1-2 weeks in a refrigerator.  Use the buttons below to order you microgreens harvested.

  1. Personal Garden – This is our favorite way to sell microgreens.  We plant the microgreens in a standard-size take out container and let them grow for a week or so.  You purchase the container, place it in your refrigerator, and harvest the microgreens fresh as you need them.  The containers have no holes in them, so there is no mess in your refrigerator.  Microgreens purchased this way can last 3 weeks and are always fresh.  In the refrigerator, your microgreens will not grow any taller.  If you want them to grow a bit, place them in a window sill for a few days.
