More tender, mild, and delicate than other kales, Tuscan Kale (called cavolo nero in Italy) can be eaten raw and is thus a great addition to salads.  It is also the kale used to make ribollita, a delicious white bean soup common in the Tuscan region.  We pick ours young so that it is extra delicious.  Our favorite recipe is here.

A hard to find French heirloom, Rouge Grenobloise is a beautiful crisp-type lettuce with varying shades of red, bronze, light and dark green, and even some yellow. Tender and crisp, this is a gourmet lettuce that will offer you (and your guests) a rare treat.

In Rome, spring salads are made with several different types of wild greens. They call it misticanza. This is our version with 14 different lettuces.  We import the seed from Italy.

Regina di Maggio is a rare, delicious Italian butterhead-style heirloom lettuce with lovely green leaves that have a hint of red trim for extra color.  This is our best, most silky butterhead lettuce.  Perfect for a sophisticated summer salad!

Sometimes you just don't need a dozen eggs.  Enjoy this smaller size of our free-range eggs.

Our hens are free-range, spending their days enjoying the sunshine and open air while roaming pesticide-free pasture. They are fed a non-GMO feed that is locally raised. Our eggs are a mix of white and brown.

Microgreens

We sell them online two different ways:

  1. Harvested – This is the typical way you will see microgreens sold.  We cut them and put them in a clear plastic clam shell container.
  2. Personal Garden – We plant the microgreens in a standard-size take out container and let them grow for a week or so.  You purchase the container, place it in your refrigerator, and harvest the microgreens fresh as you need them.  The containers have no holes in them, so there is no mess in your refrigerator.  Microgreens purchased this way can last 3 weeks and are always fresh.

If you visit us at a farmers market, we will cut your microgreens fresh from our planting trays, providing you the freshest microgreens you can buy.

Chicken

The French believe that their chickens should not be raised without flavor and we agree!

So in line with this beloved belief, we raise a chicken that originated in the southern part of France that is bred to meet the requirements of the famed Label Rouge system of certification, which emphasizes free range practices and improved flavor. Read more…
